Ingredients

  • Vegetable oil spray
  • 1 large onion – slice thinly
  • 1 teaspoon fresh ginger
  • 2 cups instant brown rice (uncooked)
  • 2 1/4 cups of water
  • 2 teaspoons No MSG McKay’s chicken-style seasoning
  • 2/3 cup grated coconut
  • 2 tablespoons fresh parsley, minced.

Directions

1. Spray vegetable oil in nonstick skillet.

2. Saute onion until soft.

3. Add ginger, rice, water and chicken-style seasoning, stirring constantly.

4. Cover pan and let simmer over low heat for 5 minutes.

5. Stir in coconut, and continue to cook until rice is tender.

6. Add parsley.

7. Serve and enjoy.
