Ayu are small fish in the salmon family that, in Japan, are found in fast-flowing rivers from western Hokkaido south through Kyushu. They grow to about 20 – 30 cm long and, when sprinkled with salt, skewered, and grilled over a fire (shioyaki), are considered a summer treat. The fish are skewered in such a way as to take on a swimming shape and are usually consumed entirely, including the head, fins, and entrails. It is said that just the word “ayu” will evoke wishful thoughts of summer in many Japanese.
